In all seriousness, we all like to eat healthy food.  This Healthy Gourmet potato salad recipe is a veggie lovers delight.  It is fast, easy, simple, and quick to cook.  It can be a make ahead recipe that is the best potato salad recipe for summertime food, picnic recipes, or summertime recipes.

How To Make The Healthy Gourmet Potato Salad


INGREDIENTS
6 large potatoes (about 6lbs), peeled
1 cup of Italian style salad dressing
8 hard boiled eggs, sliced
1 bunch of green onions, slice them thin
3 sticks of celery, chopped up
2/3 cups of chopped up and seeded cucumber, peeled
1 green pepper, chopped
1 cup of frozen peas, thaw them
1 cup of mayo
2/3 cups of sour cream
2 teaspoon of mustard
1 teaspoons of salt
1/8 teaspoon of pepper (to taste)

DIRECTIONS
Put the potatoes in a large pot. Cover them with water and bring to a boil.
Reduce the heat, cover, and cook for about 35 minutes or until fork tender.
Cool for 20 minutes or until the potatoes are easy to handle.
Dice the potatoes and then place the potatoes in a large bowl.
Add the salad dressing and toss the potatoes until they are well coated.
Let them stand for 30 minutes. You want the flavor of the salad dressing to get into the potatoes.
Stir in the egg slices.
Stir in the green onion, celery, green peppers, cucumbers, and peas.
Combine the mayo, sour cream, mustard, salt & pepper.
Now add the combination to the potato mixture.
Toss the potatoes gently in order to coat them with the mixture.
