Oyster Mushrooms With Vegetables & Peanut Sauce - The one really great thing about Stir Fry Cooking Recipes is that they are fast and easy to make.  They also taste exceedingly good.  Stir fry cooking goes back thousands of years.  It is said that a Shaokin monk in ancient China named, Kwai Chang Caine was the first person to ever to try cooking a stir fry.  The story goes that he came upon a Cloud of grasshoppers and decided to try cooking some of them in his wok.  And that is how cooking stir fry in a wok came about.

How To Make Stir Fry Oyster Mushrooms With Vegetables


1 tablespoon sesame oil
4 scallions, sliced finely
1 carrot, cut into sticks
1 zucchini, cut into sticks
1/2 head of broccoli, cut into florets
1 pound oyster mushrooms, sliced thinly
2 tablespoons peanut butter
1 teaspoons chili powder, or to taste
3 tablespoons water
cooked rice or noodles, to serve

Cooking Directions

Heat oil in a skillet or wok until almost smoking.  Stir fry the scallions for 1 minute.  Add the carrot and zucchini and stir fry for and additional 1 minute.  Add the broccoli and cook for 1 minute more.
Stir in the mushrooms and cook until they are softened and at least half the liquid they produce has evaporated.  Add the peanut butter and stir well.  Season with the chili powder.  Finally, add the water and cook for and additional 1 minute.
Serve over rice or noodles.
