Tuna Noodle Casseroles Recipes - There really is no more satisfying of a dish than any of the Tuna Noodle Casseroles that people make. After a long day of fishing that normally starts as early as 9am I am hungry and ready to chow down. A great comfort food that is easy and fast to prepare is this recipe for tuna noodle casserole. I just hand the days catch over to the little lady and she can whip up an easy tuna noodle casserole recipe in a wink of an eye. Of course if my fishing wasn’t up to par and the tuna weren’t biting, then a quick trip to the supermarket will take care of the tuna.
How To Make Tuna Noodle Casserole
1 pound tuna steaks, sliced on the diagonal
5 tablespoons butter, divided
1 sweet onion, sliced
1 pound mushrooms, either shitake, button, or Portobello are ok (about 4 cups)
2 tablespoons chopped fresh rosemary, or 1 tablespoon dried, crushed
1 tablespoon chopped fresh thyme, or 1 1/2 teaspoons dried
2 teaspoons Worcestershire sauce
1/4 cup dry sherry
1/4 cup all-purpose flour
2 cups clam juice or chicken broth
1 cup milk
2 teaspoons fresh lemon juice
3 cups egg noodles, cooked in boiling salt water
1 1/2 cups fresh breadcrumbs
1 cup grated Parmesan cheese
Preheat the oven to 375F
Coat a shallow 2 quart casserole with cooking spray.
In a large nonstick skillet, melt 1 tablespoon of the butter over medium heat. Add the tuna steaks and sauté quickly for about 2 minutes on each side. Remove the tuna from the pan and set aside.
Put the onion into the pan and sauté for 4 to 5 minutes, until the onion is wilted. Add the mushrooms and herbs and cook for 5 minutes longer. Add the Worcestershire sauce and sherry. Cook for 2 minutes longer and set aside.
Melt 3 tablespoons of the butter in a heavy saucepan over medium heat and add the flour, stir until blended. Whisk in the clam juice, milk, and lemon juice and cook, stirring, until thickened. Stir the sauce into the mushroom mixture and add the tuna. stir in the noodles and transfer the mixture to the casserole dish.
Melt the remaining 1 tablespoon butter in a small skillet and mix in the breadcrumbs. Sprinkle over the noodle mixture and top with the cheese.
Bake for 25 minutes, or until the casserole is bubbly and the topping is browned.
This recipe makes a great lunch or even a summertime or picnic recipe. It is nutritious and simple to make.
