8 ounces of potatoes, cut into 1 inch cubes
2 garlic cloves, halved
1 cup onion, sliced
2 tablespoons butter
5 cups chicken broth
1/2 cup of whipping cream
1 tablespoon of dry sherry
1 teaspoon of thyme, minced
In a large pot melt the butter
Add the sliced onions to the butter in the pot and saute for about 20 minutes. The onions should look brown and become tender
Mix in the garlic and let its flavor mix with onions and butter for a minute or two
Now add the broth and potatoes and bring to a boil
Reduce the heat, cover the pot, and let simmer for about 25 minutes. Make sure the potatoes are tender.
Let the soup cool a little bit. You don’t want to burn yourself on the next step
You can perform this next step twice so that the blender does not get too full. Pour the soup into a blender and puree
Pour the soup back into the pot
Stir in the cream, sherry, and thyme
Simmer the soup for about 10 minutes and season with salt & pepper
