A Healthy Cracked Wheat Salad Recipe - What good would a healthy cracked wheat salad recipe be if you didn’t have a full understanding of what cracked wheat was all about? 

Cracked wheat is made from whole raw wheat kernels which are crushed or cut into smaller pieces.  Cracked wheat is made from whole wheat berries, so you can be assured that it is very nutritious.

Ingredients For The Cracked Wheat Salad Recipe

1 cup cracked wheat
1 1/2 cups finely diced cucumber
2 large tomatoes, seeded and chopped
1/2 cup olive oil
1 onion, finely sliced
1 eggplant, sliced, then slices halved
2 teaspoons ground cinnamon
Salt and freshly ground black pepper
2 tablespoons raisins
1 tablespoon red wine vinegar
2 tablespoons chopped chives
2 tablespoons chopped fresh parsley

How To Make The Cracked Wheat Salad Recipe

Place the cracked wheat in a bowl and just cover with cold water
Leave to stand for 20-30 minutes, until the wheat has absorbed all the water
Turn into a fine nylon strainer, and press out any surplus water with the back of a large spoon
Place in a large bowl and add the cucumber and tomato
Heat the oil in a skillet and add the onion, eggplant and cinnamon
Cook until browned on all sides, then remove from the skillet with a slotted spoon
Season the cracked wheat well, then add the raisins
Add the vinegar to any oil remaining in the pan, season lightly then pour over the wheat
Add the chives and parsley and mix well
Arrange the onion and eggplant on top of the salad before serving
Some people might call this a “bulgur wheat salad recipe”.  Wondering what the difference is?

Bulgur wheat is made from wheat kernels that are steamed and toasted before cracking.  This gives the wheat a rich nutty flavor.
